Chef Paul Cooper’s love affair with indigenous ingredients is celebrated with a menu especially created for Sydney Festival guests. The colour and breadth of native Australian plants, spices and fruits will be represented in a number of dishes available to festival patrons. Warrigal greens, kakala and scurvy weed will be served in a bright 2 course summer menu that will include kangaroo loin with bush pepper and Chef’s much loved lemon myrtle pannacotta. Valid daily for lunch and dinner, except Saturdays after 7pm.
